If you have already switched to a plant-based diet, no longer eat meat or fish, are consciously eating less animal products or just want a delicious vegetarian alternative to the classic burger, then this recipe is for you.

An oven, paper towels, a food processor and a frying pan…

| 200 grams of mushrooms | salt and pepper |
| 40 grams of soy pieces | 1 tsp fine mustard |
| 150 grams of black beans | |
| 4 tsp breadcrumbs | |
| 1 tsp oregano | |

| 4 tbsp hummus (flavor of choice) | |
| Handful of spinach | |
| 2 tomatoes | |
| 1 jalapeño pepper |
This is how you prepare it!
Step 1: Drain the beans on kitchen paper and soak the soy pieces in lukewarm water for about 10 minutes;
Step 2: Thinly slice the mushrooms and fry briefly in the pan without oil preferably. Now also dry the mushrooms and soy pieces between the kitchen paper;
Step 3: Now chop a clove of garlic and then add the black beans, oregano, pepper and salt and let it grind. Add the soy pieces, mushrooms and bread crumbs and mix briefly in a food processor until everything is well mixed but still has some pieces;
Step 4: Bake the buns in the oven and meanwhile, slice the tomato and spinach into thin strips. Cut the fresh jalapeño into small slices. Then prepare the sauce by mixing 2 tbsp mustard with a little water. Is the taste still too sharp? Then add a small amount of mayonnaise;
Step 5: Now fry the burger mix (from step 3) on medium heat in olive oil in a preheated pan. If you use too much oil, the burgers will disintegrate more easily and that’s not what you want. After a few minutes, carefully turn over and fry the other side until crispy. The burgers will be ready in about 8 minutes;
Step 6: Cut the bagel in half and top with hummus, spinach and tomato. Top this with the burger and finish with jalapeños and the mustard sauce.
